Studio Camera Question ❓

I just bought an old copy of the Kodak Data Book 7th Edition titled, Kodak Films For Black And White Photography.
On the cover is an image of a photography studio where the photographer is using a large format camera on casters. I'm not sure whether it is a 5x7 or an 8x10 format, but I am curious to know what camera it is.
Hope someone here will know.

It looks like a Century 8x10 studio camera with a 5x7 back on it.
Not sure what's up with the boy's leg in the foreground. 8)
